The Bleeding Heart Rum Company makes Don Papa Small Batch Rum in the southern Philippine island of Negros. Made with molasses and aged for over seven years in American oak barrels before being filtered with charcoal. Papa Isio, a leader of the Philippine revolt against the Spanish who guided his island to freedom before joining the main revolutionary movement, served as the model for the moniker Don Papa rum.
