A rich, layered wine that is both sweet and savoury. The smell combines violets, plums, savory spices, and a hint of bramble. The plum fruits are moderate in weight and come in a variety of hues, which adds to the culinary intrigue. The cigar box and cardamom spice add mystique. Firm but delicate tannins ably complement the fruit, while texture drives the palate. This one is difficult to place into a box because there is so much to love.
Fruit was hand-picked, carried to a sorting table, and destemmed directly into the Yarra Yering half-tonne open fermenters. To increase perfume, as much of the whole berry is kept. A small amount of stalk is returned to some fermenters to add structure and aroma. A portion of the fermenters had frozen Viognier skins put to the bottom, while others received Marsanne skins. Before being blended and bottled, the wine was matured for 12 months in French oak barriques, 30% of which were new.
