This wine’s richness is undoubtedly due to the “Valpolicella Classico method,” a rigorous practice that includes a second maceration of the grape skins and re-fermentation of the wine itself.
A rich and strong cherry red dominates this bold and vibrant Ripasso Acinatico, followed by a smell of vanilla, varied spices, and, unsurprisingly, red cherries. Its rich, juicy flavor softly warms the palate with flowery, luscious red fruits and undertones of coffee, licorice, and spice. Wood-derived flavours and nice tannins add an earthy edge, but are complemented by blackberries, plums, and spices. The result is a fragile, fruity expression with sharp and deliciously unique proportions.
This Ripasso has a powerful impact that adds rustic charm and intensity to its flavour, as well as a concentration of vibrant acidity. Aged for 12 months in tiny wood casks.
With such a deep, nuanced collection of notes, this medium-bodied wine goes beautifully with grilled meats, soft and mild cheeses, rich fish like tuna or salmon, shellfish, and robust pasta dishes.
