Ripe cherry flavours that are generous and crisp are blended with smooth, integrated tannins. In order to create a wine with fresh fruit flavours, softness, and delicate, balanced tannins, the wine was blended and clarified.
Following harvest, the fruit was taken to the winery, where it was crushed and de-stemmed before being placed in stainless steel fermenting tanks. For optimal extraction of varietal flavor and color during fermentation, the parcels were warmed to peaks of around 28°C and then cooled back to 18–22°C.
To ensure that the fresh fruit flavours were preserved throughout the winemaking process without over extraction, routine pump-overs and rack and return processes were meticulously controlled. French and American oak were used to mature some of the properties.
