The Pouilly-Fuissés appellation’s little hamlet of Vergisson is home to the winery owned by the Morat family. The best spots for Gilles Morat’s 6.5 hectares of grapes are all Chardonnay-planted. Gilles Morat cultivates his grapes organically with the help of his wife Jolle and son Pierre; in 2022, organic certification will be given. Manual labor is required in the vines and cellars and is the foundation for top-notch wines that rank among the best in the region and need not compete with those from Meursault, Puligny, or Chassagne-Montrachet. Only some of the wines are extended in stainless steel in keeping with Burgundy tradition, which calls for expansion in wood.
